- 240g all-purpose flour
- 3 eggs M or L
- 200 g of Greek yogurt (natural and without sugar)
- 100g sunflower oil
- 200g white sugar
- 180g fresh blueberries
- 1.5 teaspoons chemical yeast*
- zest of 1 lemon
- 1 pinch of salt
*This yeast is also called baking powder. Not to be confused with the fresh yeast we use to make bread.

Prepare the dough for muffins
- start with reserve a handful of blueberries that will serve us to decorate the muffins before putting them in the oven. Using molds like mine, 9 come out muffins large and, if you decorate each one with 3 blueberries like I did, you will have to reserve 27 blueberries.
- Secondly, beat the eggs with a stick blender or a food processor. It can be done by hand, although the eggs do not foam as much and you will get a little tired.

- Next, add the Greek yogurt, oil and lemon zest. Mix a little more until everything is integrated.
- Add the well sifted flour, yeast and salt. At this point I prefer mix with a spatula, but if you see that you have lumps you can use the mixer at the lowest speed it has. A trick to avoid the hated lumps is to add the flour in 3 or 4 times.
- Add the blueberries, except the ones you had reserved, and finish mixing everything. You do have to do this step with a spatula because if you use the blender the blueberries will break.
- refrigerate the dough for at least 1 hour. This trick is the same one we use to make cupcakes rise properly during baking.

- While the dough is cooling you can preheat the oven to 220º.

- When they are done and no longer burn, transfer to a wire rack to cool completely. This is important, because if you let them cool on the tray itself, the piece of paper will moisten due to the effect of the steam that is still inside the tray. muffin.
