Ingredients for making chicken skewers with vegetables. Quantities for 10 units
- — FOR THE KEBS —
- 500 g approximately chicken breast
- 1 small zucchini
- 10 cherry tomatoes
- 5 mushrooms
- — FOR THE MARINADE —
- 1 tablespoon of Vera paprika
- 1 tablespoon dried oregano
- 2 cloves of garlic
- 2 tablespoons of vinegar
- extra virgin olive oil
- White pepper
- Salt
- 1 splash of water
How to make chicken and vegetable skewers
Marinate the chicken
- We are going to start by marinating the chicken, as it will need some resting time. Begins cutting the chicken breasts into bite size pieces, more or less.
- Secondly, hit the garlic cloves so that they open slightly and thus release all their flavor.
- Place the chicken pieces in a bowl and add all the marinade ingredients. Mix with a spoon or directly with your hands so that everything is distributed well.
- Cover the container with its own lid or with plastic wrap and put it in the fridge. Have the chicken marinate for a couple of hours so that the meat acquires all the flavors of the marinade.
- Dice the chicken, mix with the marinade ingredients and let stand
Assemble the skewers and cook them
- While the chicken rests you can go preparing the rest of the ingredients. Wash and cut the zucchini into slices and then cut each one in half. Cut the mushrooms into four pieces each. The tomatoes, if they are not very large, we will use them whole.
- Once you have the marinated chicken, we are going to mount the skewers. If you are going to use some wooden sticks like mine, you should soak them in water previously. In this way we prevent them from burning during cooking.
- Alternate chicken pieces with vegetables to your liking In case it helps you, I’ll tell you that for each skewer I used two pieces of mushroom, two pieces of zucchini, four pieces of chicken and one small tomato. In the photos you can see the order in which I placed them.
- Cook the skewers on a griddle or in a very hot frying pan. If you have any marinade left over, you can water them with it while they are being made. As you see the ingredients browning, turn them over so they cook evenly.
