Ingredients to make cookies or orange cookies

  • 190 g of wheat flour
  • 90 g of brown sugar (can be panela)
  • 60g white sugar
  • 120g butter
  • 1 egg M
  • 1 teaspoon chemical yeast
  • the skin of 1 small orange
  • 1 pinch of salt
  • 70 g candied orange cut into very small pieces

How to make orange cookies

Prepare the cookie dough

  1. Wash a small orange very well and remove its skin with a knife. Remember that you only need the colored part.
  2. place both types of sugar and the skin of the orange in the Mambo jar. Spray everything at speed 10 for 25 seconds.
  3. Add the egg. Mix at speed 4 for 2 minutes.
  4. Add the softened butterie very soft. Mix again at speed 4, but this time for 1 minute. You will have to obtain a mixture with a creamy and homogeneous aspect.
  5. Add the sifted flour, baking powder and salt. Mix at speed 2 for 25 seconds.
  6. Finish mixing the remaining flour with the spatula and add the pieces of candied orange.
  7. Take the dough out of the Mambo jar. Form a ball and cover it with plastic wrap. Let rest the dough for 1 hour in the fridge or about 20 minutes in the freezer. The idea is that it hardens so that you can handle it and the cookies keep their shape during baking.

Note: In this case I have used panela (whole cane sugar) instead of brown sugar. The panela has a very fine texture and it is not necessary to spray it, that is why you will see in the photos that I have added it together with the egg.

  • Place the orange peel together with the sugar in the Mambo jar.
  • Pulverize the orange skin with the sugar.
  • Add the panela and the egg. Mingle.
  • Mix well until a homogeneous texture is obtained.
  • Sift the flour with a strainer.
  • Add the candied orange
  • Remove the cookie dough from the jar, cover it with plastic and leave it to cool in the fridge.

Shape and bake the cookies

  1. Once the dough has cooled form balls with the help of your hands. Place them on a baking tray and flatten them slightly as you see in the photo below. To avoid having to clean the tray later, you can cover it with baking paper.
  2. In a preheated oven at 170 ºC, bake the cookies between 12 and 14 minutes according to its size. You’ll know they’re done when the edges are golden brown.
  3. take out the cookies from the oven and let them rest for a few minutes on the tray. When they are no longer burning, move them to a rack so that they cool completely.
  4. Make balls with the dough, flatten them a little and place them on the oven plate.
  5. Bake the cookies and let cool on a rack
  6. Orange cookies with the robot Mambo.

Tips for making orange cookies

  • Do you want all the cookies they fit you the same size? Use your kitchen scale to weigh the dough balls to make sure they are all the same. Mine weighed about 25 grams each.
  • surely your cook homemade orange they run out fast, but until this happens keep them in a tightly closed container. Of course, wait until they are completely cold before putting them away.
  • As I was saying above, you can substitute the candied orange for chocolate chips. They will be delicious.
  • If you don’t have brown sugar or panela at home, you can substitute it with White sugar. Of course, in this recipe do not change the sugar for syrups, dates or any other type of sweetener; they won’t turn out the same.
  • Keep an eye on the cookies during bakingbecause they take very little time to make and if they burn it’s a shame.
