- 500 ml of milk.
- 3 egg yolks.
- 10 gr of cornstarch or fine corn flour.
- 70 grams of sugar.
- 2 cookies type Maria or similar.
- A little cinnamon powder to decorate.
Preparation, how to make the recipe for homemade custard with Thermomix, fast and creamy:
- put the biscuits in the Thermomix glass and crush them for 5 seconds at speed 7. Check that they have been completely crushed, since depending on the type of cookie it may need a few more seconds. Put them in a separate container and rinse the glass a little.
- Smoothly crush the cookies without adding any water
- Pour into the glass milk and the cornstarch and mix for 10 seconds at speed 3 to dissolve.
- Mix the milk with the cornstarch so it can become more tasty
- Add the egg yolks and the sugar and cook for 13 minutes at 95ºC and speed 4. If the ingredients were cold and come directly from the fridge, they may need 15 minutes.
- The result is a cream slightly thick but not too thick, you will see that it will curdle later in the fridge.
- We already have the cream for the custard and make sure cream is not very thin.
- Share the cream in the molds or containers in which you are going to serve it. The most traditional thing is to serve it in clay pots but also in small bowl-type containers like the ones I have used.
- When they have cooled you can put the containers in the fridge to rest for at least 4 hours, although I personally like to prepare it from one day to the next and thus rest overnight in the fridge.

Take them out of the fridge about 30 minutes before if you want consume them at room temperature or they can go directly from the fridge to the table if you want them fresh. you can keep them 3-4 days in the fridge and even some more but I haven’t checked it because at home when I prepare them they don’t last too long.
They are very creamy and the touch of the ground biscuit and cinnamon is phenomenal and gives it a different presentation, although you can always serve them with the classic biscuit on top (you must place it as soon as you pour the custard cream into the bowls, so that it sticks ). It is a traditional dessert of authentic… scandal!
Variations of the recipe for homemade custard with Thermomix, fast and creamy:
If you want to prepare the custard in a very simple and with much more flavor and aroma simply put the butterfly in the glass, pour the milk into it along with the skin of a lemon (only the superficial part so that the white part does not drag as it makes it a bit bitter) and a cinnamon stick cut in half.
Cook the milk for 7 minutes at 90ºC and speed 3 so that it almost boils and is infused with the cinnamon and lemon, picking up its flavour. Transfer the milk to another container, passing it through a strainer to remove the lemon skin and cinnamon sticks, let it rest for 10 minutes and start with the recipe as it is, adding the milk and cornstarch.
Tips:
You may prepare (and in fact I recommend it) the custard in advance since they can hold you 3-4 days in the fridge. If you have decided to decorate them with a whole cookie on top, it will soften a bit as the days go by but it is not a problem because it is easier to cut it with the spoon to eat it.
