Ingredients to make the homemade caramel recipe:

  • 100 grams of sugar.
  • 4 tablespoons of water plus 30-40 ml of hot water.
  • 1 dessert spoon of lemon juice.

Preparation of homemade caramel:

  1. put the sugar in a saucepan over medium heat along with the 4 tablespoons of Water and the juice lemon. You can stir a little with a metal spoon or by moving the saucepan itself.
  2. Remove the spoon and wait without stirring until the candy start to turn golden. You can leave it more or less golden depending on how you like the flavor, since the darker it is, the more toasted and even bitter it is.
  3. Take it away from the fire and be very careful, do not touch it at any time because it is at a very high temperature and can cause serious burns. I have put a spoon just so that the color of the caramel can be better appreciated, but it is not necessary to use it.
  4. Heat the 40 ml of Water in the microwave practically until it boils, pour them little by little into your caramel and move the saucepan a little so that everything is integrated. The objective is to obtain a candy that it does not harden even in the fridge when we let the flans rest.

Ingredients to make the soft nougat flan recipe with Thermomix. Non-oven version (6 servings):

  • 200 gr of soft nougat or Jijona type.
  • 500 ml of milk.
  • 200 ml of liquid cream to mount.
  • 80 grams of white sugar.
  • 1/4 teaspoon of vanilla essence dessert (optional).
  • 2 sachets of curd powder.
  • Liquid caramel (the one we have prepared homemade).
  • To decorate, crocanti almonds or crumbled soft nougat or chopped toasted almonds.

Preparation, how to make Jijona nougat flan with Thermomix without oven:

  1. Put in the glass of the Thermomix the soft nougatthe milkthe sugar and the cream and crush it all together for 10 seconds at speed 6.
  2. Incorporates the Curd and the vanilla and mix for 3 seconds at speed 5.
  3. Cook the mixture for 8 minutes at 100ºC and speed 2.
  4. Meanwhile, pour the candy in 6-8 flan molds (I have distributed it in 6 molds and, as you can see in the photograph, they come out big) or, if you prefer, in a single rectangular mold.
  5. Pour the mixture into the molds and let them cool to room temperature. Then leave them in the fridge so that they set perfectly for a minimum of 2 hours, although I recommend preparing them from one day to the next because the flavors will be more established and powerful.
  6. They almost unmold just looking at them like this if you have left them in individual molds, put a plate on top of the mold and turn it over quickly. if it remains candy in the mold repel it and pour it on top of the flan.
  7. To decorate you can chop a little soft nougat and put it on top, or use almond crisp (sold ready-made) or even some chopped toasted almonds.

Ingredients to make the Jijona nougat flan recipe with Thermomix. Version with oven and eggs (6 servings):

  • 4 eggs L.
  • 500 ml of milk.
  • 200 gr of soft nougat or Jijona type.
  • 120 grams of sugar.
  • 1/2 dessert spoon of vanilla essence.
  • To decorate, crocanti almonds or crumbled soft nougat or chopped toasted almonds.

Preparation, how to make soft nougat flan with Thermomix, with oven and eggs:

  1. Put in the glass Jijona nougatthe milk and the sugar and crush 15 seconds at speed 7.
  2. Incorporates the eggs and the essence of vanilla and mix 15 seconds at speed 4.
  3. pour the candy in 6 flan molds or, if you prefer, in a single rectangular mold.
  4. Heat the oven to 160ºC with heat up and down and place an oven rack in the middle where we will later put the tray with the flans.
  5. Pour the mixture into the molds and place them on a baking tray that has a certain height. This photo is of my egg flan without further ado, I have simply put it so you can see how I bake the flans.
  6. Fill the tray with Water until it covers the molds halfway and put it in the oven at medium height.
  7. Cook them like this in a bain-marie in the oven for between 45 minutes and 1 hour. To know if the upper part is ready by slightly moving the pudding It should shake a bit but if you insert a toothpick it should come out clean. It can also happen to you like me, that the upper resistance of my oven is very powerful and usually leaves the upper area of ​​the flans very curdled, and in that case simply do the toothpick test to know if they are already perfectly cooked.
  8. Take them out of the oven and when they have cooled completely put them in the fridge and let them cool for about 3-4 hours.
  9. To unmold them, simply insert the tip of a knife that is not very sharp (for example, those used to spread butter or pâté) to the bottom so that the air enters the mold (if they are silicone, be careful not to cut them), turn them over on a plate and unmold them.
  10. To decorate you can chop a little soft nougat and put it on top, or use almond crisp (sold ready-made) or even some chopped toasted almonds.

Time: between 25 and 35 minutes, separately baked and cooled

For the version without oven this is not a problem, just let it rest in the mold for 2-3 hours and that’s it.

Although the nougat already gives it a lot of flavor, you can include citrus zesta bit of cinnamon powder or even cardamom ground to give it a different touch and adapted to your tastes.
