Ingredients to prepare dough for empanadas and dumplings with Thermomix, unbeatable! (quantity for an empanada like the one in the photo):
- 450 gr of wheat flour.
- 150 ml of milk.
- 130 ml of sunflower oil. You can also use olive oil but in my opinion it adds too much flavor.
- 1/2 M egg for the dough and the other half to paint the empanada when it is ready to go into the oven.
- 1/2 dessert spoon of sweet paprika if you want to give it an orange color.
- Half teaspoon of salt dessert.
Preparation, how to make the dough recipe for empanadas and empanadillas with Thermomix, unbeatable!:
- Put in the glass of the Thermomix all the ingredients of the dough: the wheat flourthe Saltthe sweet paprikathe milkthe middle egg and the oil.
- Mix first 15 seconds at speed 6.

- take out the dough of the glass, knead it a little with your hands to compact it and shape it into a ball. Put it in a bowl and let it rest for 15 minutes.
- Let the empanada dough rest
- The dough resulting will weigh almost 800 gr and you can now divide it and use it as you prefer.
- I recommend stretching it out with a rolling pin on parchment paper because it is quite a greasy dough and thus does not stain any surface with oil. That if, leave it very finite so that later it is baked correctly and is very crispy.
- Stretch the empanada dough, fill it and close it
- To bake it, preheat the oven to 190ºC, with heat up and down and a fan, while you shape and fill them as you prefer, whether it is a large empanada or empanadillas.

- When it’s ready, take it out of the oven and let it rest with the baking paper on a rack until it’s warm or completely cool, depending on how you like to eat it. Ideally I recommend a rest of at least 30 minutes before breaking it or eating it.

Always remember let your empanadas rest on a rack as soon as they come out of the oven so that the base does not get wet and they remain crispy. Of course, after they have cooled down when they are richest because if we leave them from one day to the next it also happens that they lose part of that crunchy touch although they are still very good and you can keep them in the fridge 2-3 days or even freeze them.

If you are going to prepare a vegetable stir-fry for the filling of your empanada, you can add more oil than you would normally use and, when you finish cooking the vegetables, put them in a colander and use the oil they release for the dough, adding more oil until you get the one you need, gives you a fantastic extra flavor. If your sauce is going to have crushed tomato, you should strain the vegetables before adding the tomato because later it would be quite complicated or almost impossible to separate the oil.
Dare to add spices and herbs to your dough to give them a different touch, for example a little turmeric or even dried curry powder, thyme or oregano.
Tips:
Keep an eye on your empanada or dumplings during baking, at least the first time you make them since each oven is a world and it is possible that they bake at a temperature higher or lower than that indicated. The thickness that you have left to the dough also influences and it will need different time if it is a single large empanada than if they are small empanadas since they will be ready before. Always try to bake it well so that the dough is not raw inside but that it browns without burning.
